Catering Food Safety

With the mini heatwave we’ve experienced these last few weeks, many food businesses will be thinking about setting up outdoor catering. As things move outdoors, the risks will still follow.

With outdoor catering, the higher temperatures and changing environments can increase the risks such as cross-contamination and allergen exposure. it’s critical that your team knows how to handle food safely in these conditions.

So here are our top summer catering tips:

Keep up your hand hygiene —You may not have access to a sink outdoors. Make sure you have a sanitisation plan in place. Disposable gloves (when used properly) can help

Clear Labelling —Anything you pre prepared, even if allergen-friendly, needs to be labelled. Clear labelling is non-negotiable. It not only helps your staff but also reassures your customers.

Keep it cool – Make sure you invest in appropriate coolers or at the very least, insulated containers for transporting perishable items. Make sure you always monitor temperatures with thermometers.

Cross-contamination – It’s certainly not not great to place a pile of buns on the same tray as the gluten-free options? When things like this get over looked they can cause big issues. Plan your layout and food presentation well.
